Apricot Brie in Puff Pastry

A simple, elegant appetizer.

1 sheet frozen puff pastry, defrosted,
    but still very cold
1 wedge (.60 to 1.0 lb) Primo Taglio     French Brie
¼ cup Safeway Select Apricot     preserves
2 tablespoons chopped dried apricots
1 tablespoon dried cranberries
1 egg mixed with 1 tablespoon water
    Thin slices Safeway Select Artisan     baguette, optional

Open pastry onto a lightly floured work surface. Place Brie toward one side. Spread top with apricot preserves. Sprinkle with dried apricots and cranberries.

Fold pastry over Brie, tucking excess underneath. Brush top and sides with egg. Place in a greased pie dish. Refrigerate, covered, at least one hour or overnight.

Bake uncovered in preheated 400º F oven for 20 to 25 minutes or until top is golden. Let rest 10 minutes before serving. If desired, serve with sliced baguette.
