Crustless Black Forest Ham & Swiss Cheese Quiche

A delicious twist on traditional quiche,
this has all the wonderful flavor of quiche without the crust.

8 oz. sliced fresh mushrooms
2 tablespoons Lucerne Butter
4 eggs
1 cup (½ pt.) Lucerne Sour Cream
1 cup (½ pt.) Lucerne Small Curd Cottage Cheese
½ cup grated Primo Taglio     Parmigiano Reggiano Cheese
4 tablespoons fl our
1 teaspoon onion powder
¼ teaspoon salt
4 drops Tabasco Sauce, or to taste
2 cups (8 oz.) shredded Primo Taglio     Lacy Swiss Cheese
8 oz. Primo Taglio Black Forest Ham,     sliced ¼-inch thick, cut into small     cubes

Preheat oven to 350º F. In a medium skillet over medium high heat, melt butter. Add mushrooms and sauté until tender. Remove with a slotted spoon and drain on paper towels.

In a food processor or blender, mix eggs, sour cream, cottage cheese, Parmigiano Reggiano cheese, flour, onion powder, salt and Tabasco. Pour into a large bowl. Stir in sautéed mushrooms, Lacy Swiss Cheese and ham.

Pour into a 9 ½-inch deep-dish pie dish. Bake for 45 minutes or until a knife inserted in the center comes out clean. Quiche should be puffed and golden brown.
