Prep Time: 5 min
Total Time: 5 min
Serves: 2

  • 2 large ripe bananas, frozen into chunks
  • 1/2 cup canned pumpkin purée, frozen into cubes
    (see direction below)
  • 1-1/2 teaspoon pumpkin spice or ground cinnamon
  • A squirt of honey (optional)
Shop Ingredients

  1. Let the frozen pumpkin cubes thaw just a little bit before using. In the food processor or high-powered blender, put frozen bananas, pumpkin purée ice cubes and pumpkin pie spice.
  2. Pulse over and over until an "ice cream" consistency forms (it's important that you only "pulse" the food processor—do not turn it fully on). Mixture will break up, and then slowly become an ice cream consistency. Add a squirt of honey to the mixture if you like it a little sweeter (depending on the sweetness of your banana). Scoop and serve immediately.

NOTES: To freeze the pumpkin purée, spoon it into ice cube trays and freeze overnight. Pop them out and let them thaw just a bit before putting in the food processor. To freeze bananas, peel them and place in zip-top freezer bags. Freeze overnight.
