Directions
Chocolate Chip Cookies: 7 TBSP butter. 1/4 cup white sugar. 1/4 cup light brown sugar. 1 egg, large. 1 tsp vanilla. 1-1/2 cups Pamela's Pancake & Baking Mix. 1 cup semi sweet chocolate chips. Optional: 1/2 cup chopped walnuts. Instructions: Preheat oven to 350 degrees. Cream butter and sugar, add egg and vanilla, then beat together. Add Baking Mix, chocolate chips and nuts, then mix thoroughly. Place scoops of dough (1 TBSP scoop) on a lightly greased cookie sheet. Bake for 15 minutes or until edges start to brown. Let cookies cool slightly and use a spatula to remove from cookie sheet. Banana Bread: 4 TBSP butter, melted. 1/2 cup sugar or honey. 2 eggs, large-beaten. 1 cup bananas, mashed. 1-3/4 cups Pamela's Pancake & Baking Mix. 1 tsp vanilla. 1/2 tsp salt. Optional: 1/2 cup nuts. Instructions: Preheat oven to 350 degrees. Beat together butter, sugar or honey, eggs and bananas. Add remaining ingredients and mix together. Pour into greased 8 inches × 4 inches loaf pan. Bake for 1 hour, or when inserted toothpick comes out clean. Pan-cakes Recipe. 1 cup Pamela's Baking & Pancake Mix. 1 egg, large. 2/3 cup water. 1 TBSP oil. Instructions: Mix all ingredients together until there are no lumps. Pour 1/4 cup batter onto a preheated, lightly oiled griddle (Medium low heat, or 350 degrees for electric griddles), flip once. Serve immediately. Extra pancakes can be cooked, cooled, and then wrapped in plastic and frozen. To reheat, remove any wrapping and microwave pancakes wrapped in a paper towel until hot, approximately one minute or 15-20 seconds per pancake until desired temperature is reached. Waffles: 2 eggs, large separated. 1-1/2 cups Pamela's Pancake & Baking Mix. 3/4 cup water. 1 TBSP oil. Instructions: Whip egg whites until stiff. In a separate bowl, combine Pamela's Pancake Mix, egg yolks, water and oil until there are no lumps. Fold in stiff egg whites and bake immediately in preheated, greased waffle iron. Serve waffles hot off the iron. For crispier waffles, increase baking time.
