Quick Soak: 1. Sort and rinse beans. 2. Boil 6-8 cups of water. 3. Add 1 lb. (2-1/2 cups) of beans, and then boil for 2 minutes 4. Remove from heat, cover with lid and let stand for 1 hour. Rinse beans after draining water. Overnight Soak: 1. Wash and sort the beans. 2. Add 1 lb. (2-1/2 cups) of beans to 6-8 cups of water. 3. Let stand for at least 6 to 8 hours, preferably overnight. 4. Rinse beans after draining water. Cooking Instruction: 1. Bring 6-8 cups of water to boil. Add drained and rinsed beans (2-1/2 cups) to the boiling water and reduce heat to simmer. 2. Simmer gently and cover with lid until desired tenderness is reached, about 1-1/2 to 2 hours. 1 serving 1/2 cup cooked. Difference in altitude, hardness of water and product moisture may change the Suggestion Cook Time: Beans are an agricultural product. Despite the use of modern cleaning equipment, it is not always possible to remove all foreign materials. Sort, remove foreign materials, and rinse beans before cooking.
